Ingredients
10 oz frozen chopped broccoli (thawed and drained), 1/2 cup chopped onion, 2 tsp minced garlic, 1 tbsp fat-free chicken broth, 1/2 cup non-fat cottage cheese, 1 tsp fried oregano leaves, 1/4 tsp black pepper, 1 cup egg beaters, 1 slice toasted bread (cut into 5 strips), 1 cup non-fat grated mozzarella cheese, 1 tsp liquid butter buds
Method
Use a non-stick sauce pan and cook broccoli and garlic in chocken broth with medium heat. Stir in cottage cheese, oregano and pepper. Remove from sauce pan and keep warm
In the same sauce pan, add 1 tsp liquid butter buds and cook half of the egg beaters in it.When almost set, sprinkle 1/4 of cheese over the dish. Remove from sauce pan and keep warm.
Repeat with the other half of egg beaters and cheese.
Place the first set of cooked egg beater on a plate, add filling on top. Place the second set of egg beater on top of the filling. Sprinkle the remaining grated cheese on top. Bake at 425°F for 5 minutes or until the top is set and turn golden brown. Garnish with toast strips and cut into wedges.

Ingredients
1 (8 oz) carton Egg Beaters (1 cup), 1/8 tsp black pepper, 1/8 tsp marjoram leaves, 1/4 cup finely chopped celery, 1/4 cup finely chopped red pepper, 2 tbsp finely chopped green pepper, 1 tbsp fat-free chicken broth, 1 cup grated non-fat cheddar cheese, 2 slices whole wheat bread (toasted), 1 tbsp chopped chives, non-fat cooking spray
Method
Combine Egg Beaters, pepper and marjoram then set aside.
Spray non-fat cooking spray in a non-stick skillet, over medium heat, cook celery, chives, red and green pepper in chicken broth until ingredients become tender.
Add Egg Beaters and grated cheese to mixture. Cook stirring occationally until set. Serve immediately over toast or plain.
