Asparagus with Eggs Recipe

The addition of fried eggs and grated Parmesan turns asparagus into something special.

      Ingredients

  • fresh asparagus - 500g

  • eggs - 5

  • Parmesan cheese - 5 tbsp, grated

  • butter - 6 tbsp

  • ground black pepper and salt

 

Method

  • Cut off any woody ends from the asparagus. Peel the lower half of the spears, wash the asparagus in cold water.

  • Bring a large pan of water to boil, cook the asparagus until tender.

  • While the asparagus is cooking, melt the 3 tbsp butter in a pan, break in the eggs and cook them until the white have set but the yolks are still soft.

  • Remove the asparagus when it cooked, place it on a wire rack covered with clean dish tower. Divide the spears between warm serving dish.

  • Place a fried egg on each and sprinkle with grated cheese.

  • Melt the remaining butter in a pan, before it turn browns, pour it over the cheese and eggs on the asparagus.

  • season with pepper and salt, serve at once. Serves 5.
