The addition of fried eggs and grated
Parmesan turns asparagus into something special.

Method

Cut off any woody ends from the
asparagus. Peel the lower half of the spears, wash the asparagus
in cold water.

Bring a large pan of water to boil,
cook the asparagus until tender.

While the asparagus is cooking, melt
the 3 tbsp butter in a pan, break in the eggs and cook them until
the white have set but the yolks are still soft.

Remove the asparagus when it cooked,
place it on a wire rack covered with clean dish tower. Divide the
spears between warm serving dish.

Place a fried egg on each and sprinkle
with grated cheese.

Melt the remaining butter in a pan,
before it turn browns, pour it over the cheese and eggs on the
asparagus.

season with pepper and salt, serve at
once. Serves 5.
