Egg Bacon and Salsa Recipe

Ingredients

 

lean beef bacon - 8 slices

eggs - 4

can tomatoes - 400g, diced

baby spinach

thick bread - 4, use any bread of your choice

olive oil - 1/4 cup

olive oil - 1 tsp, extra

chili powder - 1/2 tsp

 

Method

 

Using an cookie cutter, cut bread into rounds. Then cut a hole on center of the bread round(5cm wide).

Heat oil in a pan over medium heat, cook the bread until golden.

Flip the bread, break an egg into the hole and cook until egg white is set and bread is golden.

Heat the extra oil in another pan over high heat, cook bacons for 3-5 minutes until crisp.

Mix tomatoes and chili powder in a pan, stir over low heat for 4-5 minutes, season to taste.

Serve eggs with bacon, tomato salsa and spinach. Serve 4.

Cooking time: 20 minutes
