Eggs with Smoked Salmon Recipe

Ingredients

 

smoked salmon - 500g

eggs - 4

baby spinach - 50g

thickened cream - 200ml

grated cheese - 1/2 cup, any favorite you like

spring onion - 2, sliced

salt - to taste

bread - toasted

salad leaves

Method

 

Preheat oven to 180˚C, lightly grease the cup ramekins.

Place the salmon in pan, cover with water and simmer over medium heat.

Remove from pan and flake flesh with fork.

Divide the fish evenly between ramekins, sprinkle each with onion and top with spinach.

Pour 50ml cream into each ramekin and sprinkle with some salt.

Break an egg into the ramekin and sprinkle with cheese.

Bake 10-15 minutes until golden and cooked.

Serve with bread and salad leaves. Serve 4.
