Mexican Eggs Recipe

Ingredients (Serves 6)

  • 3 corn tortillas (cut into 2-inch strips)

  • 3 tbsp fat-free chicken stock

  • ½ cup diced onion

  • 1 can (14 oz) stew tomatoes

  • 1 cup shredded white turkey meat (cooked, skinned)

  • ½ cup green pepper strips

  • 1½ cups Egg Beaters (beaten)

  • 1 cup non-fat mozzarella (grated)

Method

  • Use a deep sauce pan bring the chicken stock to boil then add the tortillas and cook until golden. Remove and set aside.

  • Add tomato liquid into the sauce pan then bring to a boil, add onion, tomatoes, turkey, pepper and continue to heat with constant stirring.

  • Reduce heat and add tortillas and Egg Beaters. Cover and simmer for 4-6 minutes or until cheese is melt. Serve hot.
