Ingredients

 

egg - 1, lightly beaten

carrot - 1/4 cup, grated

dried chives - 1/2 tsp

potato - 1/4 cup, grated

low-fat cheese - 2 tbsp, grated

oil - 1/4 tsp

Method

 

Squeeze excess moisture from the grated potato.

Place potato together with carrot, egg, chives, and cheese. Stir well.

Heat oil, pour the egg mixture into the pan and cook for 2 minutes on both sides over medium heat.

Serve.
