Mushroom and Mozzarella Bake Recipe

Ingredients

 

mushrooms - 3/4 cup, chopped

onion - 1/4 cup, chopped

eggs- 2, large, lightly beaten

Mozzarella cheese - 1/4 cup, shredded

Parmesan cheese - 2 tbsp, grated

puff pastry shells - 1 package

ground black pepper - 1/4 tsp

salt - 1/2 tsp

butter - 1 tbsp

whipping cream - 1/2 cup

dry mustard - 1/2 tsp

soy sauce - 1 tbsp

Method

 

Bake puff pastry shells according to the package instruction. Set aside.

Whisk eggs, cheeses, and cream, set aside.

Melt butter in a pan over medium heat, add onions and stir-fry until soft.

Add in mushrooms and cook further 5 minutes, stir in mustard and soy sauce.

Season to taste with pepper and salt, remove from heat and cool.

Stir in mushrooms and onion into the egg mixture, pour into a shallow baking dish.

Bake 20 minutes over 375˚F/190˚C, until golden brown.

Spoon the cooked egg mixture into the puff pastry shells, then place them back into oven and bake 5 minutes. Serve hot. Serves 2.
