Omelet with Beans Recipe

Every good cook should have a few omelets in their repertoire. This version includes soft white beans and is finished with a layer of toasted sesame seeds.

 

Ingredients

  • can soft white beans - 400g, drained

  • eggs - 8

  • Spanish onion - 1, chopped

  • celery sticks - 2, chopped

  • sesame seeds - 4 tbsp

  • sesame oil - 2 tsp

  • olive oil - 3 tbsp

  • small red pepper - 1, seeded and diced

  • green salad - to serve

  • ground black pepper and salt

Method

  • Heat the olive oil and sesame oil in a frying pan. Add the celery, pepper and onion, cook until soften without coloring.

  • Then, add the beans and continue to cook for several minutes to heat through.

  • Beat the eggs in a small bowl, season with pepper and salt, pour over the ingredients in the pan.

  • Stir the egg mixture with flat wooden spoon until it begins to stiffen, then cook over a low heat for 8 minutes.

  • Preheat a moderate grill, sprinkle the omelet with sesame seeds and brown evenly under the grill.

  • Cut the omelet into wedges and serve warm with a green salad. Serves 4.
