Pear and Pecan Salad with Blue Cheese Recipe

Toasted pecan nuts have a special union with crisp white pears. Their robust flavors combine especially well with a rich blue cheese dressing and make this a salad to remember.

 

Ingredients

  • crisp pears - 3

  • shelled pecan nuts - 80g, chopped

  • young spinach - 180g, stems removed

  • butterhead lettuce - 1

  • radicchio - 1

  • blue cheese dressing - 3 tbsp

  • ground black pepper and salt

  • crusty bread - to serve

Method

  • Toast the pecan nuts under a moderate grill, to bring out their flavor.

  • Cut the pears into even slices, leaving the skin intact and discarding the cores.

  • Wash the salad leaves and spin dry. Add the pears together with the toasted pecans, toss with dressing. Season with pepper and salt. Serve with warm crusty bread. Serves 4.
