Toasted pecan nuts have a special union
with crisp white pears. Their robust flavors combine especially well
with a rich blue cheese dressing and make this a salad to remember.
Ingredients

crisp pears - 3

shelled pecan nuts - 80g, chopped

young spinach - 180g, stems removed

butterhead lettuce - 1
-
radicchio - 1

blue cheese dressing - 3 tbsp

ground black pepper and salt

crusty bread - to serve
Method

Toast the pecan nuts under a
moderate grill, to bring out their flavor.

Cut the pears into even slices,
leaving the skin intact and discarding the cores.

Wash the salad leaves and spin dry.
Add the pears together with the toasted pecans, toss with dressing.
Season with pepper and salt. Serve with warm crusty bread. Serves 4.
