Method
First, beat flax seed with water until it forms a ''beaten egg'' consistency. Add vinegar into soy milk and leave it for few minutes. Add flour 1/2 cup at a time to the flax seed mixture, alternating with 1/2 cup of curdled soy milk, until all are incorporated. Mix canola oil and maple syrup, and lastly the pecans. Cook on hot waffles maker until steam slows. Serves 4.
