Pecan Waffles Recipe

Ingredients

 

unbleached self-raising flour - 1 1/2 cup

plain soy milk - 1 1/2 cup

water - 12 tbsp

canola oil - 3 tbsp

pecans - 3/4 cup, chopped

vinegar - 1 tbsp

golden flax seed - 3 1/2 tbsp, finely ground

maple syrup - 3 tbsp

 

Method

 

First, beat flax seed with water until it forms a ''beaten egg'' consistency.

Add vinegar into soy milk and leave it for few minutes.

Add flour 1/2 cup at a time to the flax seed mixture, alternating with 1/2 cup of curdled soy milk, until all are incorporated.

Mix canola oil and maple syrup, and lastly the pecans.

Cook on hot waffles maker until steam slows. Serves 4.
