Ingredients

 

egg - 4

spinach - 1/2 cup, chopped

leek - 1/2

green and red pepper - 1/2 for each

pepper and salt - to taste

Method

 

Chop all vegetables and sauté in a frying pan until moderate soft.

Add whisked eggs to pan, add pepper and salt, cook until desired consistency.

Serve with a slice of toasted wholegrain. Serve 2.
