Ingredients
Black beans – 2 cans, drained and rinsed
Tomatoes – 1 cup, chopped
Jalapeno pepper – 2 tbsp, chopped
Red onion - ½ cup, chopped
Corn kernels – 2 cup, cooked
Red bell pepper – 1 cup, chopped
Ground cumin - ½ tsp
Pepper and salt – to taste
Olive oil - ¼ cup
Lime juice – 3 tbsp
Cilantro - ¼ cup, chopped
Method
Mix all ingredients except cilantro in a bowl and toss well.
You can choose to serve at once or store in fridge to chill.
Garnish the salad with cilantro before serving. Serves 8.
