Broccoli and Cauliflower with Tomato Sauce Recipe

Ingredients

  • broccoli - 300g

  • cauliflower - 300g

  • can tomatoes - 300g, chopped

  • onion - 1, chopped

  • tomato puree - 2 tbsp

  • wholemeal flour - 2 tbsp

  • water - 200ml

  • skimmed milk - 200ml

  • ground black pepper and salt

Method

  • Boil the tomatoes, onion, and tomato puree in a pan, lower the heat and simmer for 20 minutes.

  • Mix the flour to a pasta with a little of the milk. Stir the paste into the tomato mixture, add the remaining milk and water.

  • Stir the mixture until it boils and thickens. Season with pepper and salt and keep it hot.

  • Steam the broccoli and cauliflower over boiling water until the florets are just tender. Put them into a dish, pour the tomato sauce over it and serve with extra pepper sprinkled over the top. Serves 4.
