Ingredients
potato - 1, medium spring onion - 1 low-fat cheddar cheese - 1 tbsp, grated tomato - 1/2, small dried basil
Method
Scrub the potato, pierce skin, cook in microwave over high heat for 4 minutes. Chop the spring onion and tomato, mix them with cheese and sprinkle some dried basil. Leave the cooked potato to cool, then cut slice from top to create a lid. Scoop out the potato, mix with the tomato mixture and scoop back into the potato shell. Cover the potato with the lid and cook in the microwave on high heat for a minutes. Serve hot.
