Home-Made Pumpkins Soup Recipe

Ingredients

 

butternut pumpkin - 250g, peeled, chopped

chicken stock - 3/4 cup

cooking oil - 1 tsp

green ginger - 1 tsp, grated

spring onion - 3, sliced

whole grain bread roll - 1

 

Method

 

Heat oil, stir in ginger and onion, add pumpkin and cook for 5 minutes. Stir occasionally.

Add in pepper and chicken stock and bring to boil. Reduce heat and simmer for 10 minutes until pumpkin tender.

Blend the cooked pumpkin soup with blender to make the soup thick.

Reheat the soup before serving, pour into bowl and serve well with bread. Serve 1.
