Oatmeal Fried Prawns Recipe

Ingredients

 

prawns - 500g, large

oats - 20g

egg yolks - 3, lightly beaten

evaporated milk - 3 tbsp

butter - 1 tbsp

oil - 1 cup for deep-frying, and 3 tbsp for cooking

pepper and salt - to taste

 

Method

 

Marinate prawns with salt and pepper for 30 minutes.

Heat oil in wok over medium heat, when oil is hot, deep-fry prawns for 5 minutes.

Remove prawns from wok, drain and set aside.

Heat butter and 1 tbsp oil in clean wok until hot. Add in egg yolks, quickly swirl the egg yolk mixture to form fine strands using the back of ladle.

Cook the egg until lightly golden. Remove the egg strands and set aside.

Fry the oats in oil until it crispy, add in the prawns and drizzle evaporated milk over.

Stir-fry over high heat briskly, salt to taste and add egg strands, stir to mix well and serve. Serve 4.
