Onion and Mushroom Crab Recipe

Ingredients

 

crab - 6, steamed for 25 minutes and flesh removed, reserve crab shells

onion - 1, large, chopped

button mushrooms - 40g, diced

egg - 1, lightly beaten

oil - 2 tbsp

parsley - 3 stalks, chopped

coriander - 2 stalks, chopped

bread - 3 slices, crusts removed, cubed and soaked in 1/2 cup milk

sugar - 1/4 tsp

pepper - to taste

 

Topping

 

grated black pepper

breadcrumbs - 1/2 cup

grated parmesan cheese - 1//2 cup

 

Method

 

Preheat oven at 180˚C.

Heat oil in a pan over medium heat, stir-fry onions until fragrant.

Add in mushrooms and stir-fry 1 minute, remove and set aside.

Mix together fried onion mixture, egg, crabmeat, coriander, parsley, soaked bread, sugar and pepper.

Divide the filling into 6 portions and stuff into the crab shells.

Place the stuffed crab shells in a baking dish, sprinkle with the topping ingredients and bake 20 minutes until the tops are lightly golden. Serve 6.
