Pasta Salad Recipe

Ingredients

 

spring onion - 1, chopped

lettuce leaves - 3

tomato - 3, small, cut into wedges

mixed pasta twists - 1/2 cup

carrot - 1, small, grated

red capsicum - 1/2, small, diced

can creamed corn - 130g

zucchini - 1, small, grated

leftover lean chicken - 1/2 cup, cooked

whole meal pitta - 1

 

Method

 

Cook the pasta in boiling water for 10-12 minutes until it tender, drained and cool.

Mix the pasta with corn, carrot, onion, chicken, zucchini, and capsicum.

Place the lettuce in the plate or lunchbox, and spoon the salad onto lettuce.

Garnish the salad with tomato wedges. Serve 2.
