Potato Salad Recipe

Ingredient

 

Pontiac potato - 1, medium

spring onion - 1, chopped

margarine - 1/2 tsp

can tuna - 100g, in brine

curry powder - 1/4 tsp

low-fat natural yogurt - 2 tbsp

whole meal roll - 1

 

Method

 

Clean the potato and cut into small cubes. Boil and cook the potato until tender, drain and cool.

Drain the tuna (reserving 2 tsp brine), mix the tuna, spring onion and potatoes.

Add in the brine and curry powder to the yogurt and mix well.

Pour the dressing over the salad and toss to combine.

Spread margarine on the bread and serve together with the salad. Serve 1.
