Potatoes Stew Recipe

Ingredients

 

bacon - 5-6 slices, diced

chicken broth - 3 cups

potatoes - 3 pounds, cut into chunks

onion - 1, large, cut into chunks

green onion - 4-6, sliced

dried leaf thyme - 1 tsp

sweet ground paprika

bay leaves - 2

pepper - to taste

flour - 1 1/2 tbsp

dry white wine - 1/4 cup

 

Method

 

Cook the bacon until crisp, add onions and cook until they soften.

Sprinkle flour over the onions and add bay leaves and thyme, then increase to high heat.

Pour in wine and stir occasionally. Cook about 2 minutes until wine has evaporated.

Add in potatoes, pepper, and broth. Bring to boil, then reduce heat. Simmer 45-60 minutes until potatoes tender.

Remove the bay leaves, sprinkle with paprika and serve hot.
