A sweet and sour, spicy red cabbage dish,
with the added crunch of pears and walnuts
Ingredients

red cabbage - 500g, shredded

port - 175ml

red wine - 350ml

red wine vinegar - 4 tbsp

onion - 1, sliced

whole star anise - 2

walnut halves - 120g
-
pears - 2, cut into cubes

walnut oil - 2 tbsp

ground cinnamon - 2 tsp
-
a pinch of ground cloves

dark brown sugar - 3 tbsp
-
raisins - 120g
-
ground black pepper and salt
Method

Heat the oil in a pan, add the
onion and cook for 5 minutes until softened.

Add the star anise, cinnamon,
cabbage, cloves and cook for few minutes more.

Stir in the port, sugar, vinegar,
and red wine, cover and simmer for 12 minutes, stirring
occasionally.

Then, stir in the cubed pears and
raisins, cook for further 12 minutes more until the cabbage is
tender. Season with pepper and salt, mix in the walnuts halves
and serve. Serves 6-8.
