Red Cabbage in Port and Red Wine Recipe

A sweet and sour, spicy red cabbage dish, with the added crunch of pears and walnuts

 

Ingredients

  • red cabbage - 500g, shredded

  • port - 175ml

  • red wine - 350ml

  • red wine vinegar - 4 tbsp

  • onion - 1, sliced

  • whole star anise - 2

  • walnut halves - 120g

  • pears - 2, cut into cubes

  • walnut oil - 2 tbsp

  • ground cinnamon - 2 tsp

  • a pinch of ground cloves

  • dark brown sugar - 3 tbsp

  • raisins - 120g

  • ground black pepper and salt

Method

  • Heat the oil in a pan, add the onion and cook for 5 minutes until softened.

  • Add the star anise, cinnamon, cabbage, cloves and cook for few minutes more.

  • Stir in the port, sugar, vinegar, and red wine, cover and simmer for 12 minutes, stirring occasionally.

  • Then, stir in the cubed pears and raisins, cook for further 12 minutes more until the cabbage is tender. Season with pepper and salt, mix in the walnuts halves and serve. Serves 6-8.
