Roasted Beef in Salad Recipe

Ingredients

 

mignonette lettuce leaves - 2

lettuce leave - 2

asparagus - 4 stalks

snow pea sprouts - 20g

lean roasted beef - 3 slices, cut into pieces

wholegrain bread - 1 slice

 

Dressing

 

white wine vinegar - 3 tsp

oil - 1 tsp

chives - 1 tsp, chopped

low-fat natural yogurt - 1 tsp

seeded mustard - 1/4 tsp

 

Method

 

Wash the sprouts and lettuce leaves, dry it.

Trim the snow peas and cut asparagus into pieces, then blanch in boiling water, drain and cool.

Arrange the vegetables, lettuce and meat in the lunchbox.

Toast bread and cut into small cubes. Sprinkle the bread over the salad.

Mix all the dressing well. Before serving, sprinkle over the salad. Serve.
