Complicated salad dressing are rarely
found in Spain - they simply rely on the wonderful flavor of a good
quality olive oil.
Ingredients

romaine lettuce leaves - 75g, shredded

oranges - 2, large

asparagus - 250g, trimmed and cut into
pieces

tomatoes - 2, cut into eighths

sherry vinegar - 1 tsp

olive oil - 3 tbsp

ground black pepper and salt
Method

Cook the asparagus on boiling
salted water for 5 minutes until tender. Drain.

Grate the rind from half an orange
and cut into segments. Squeeze out the juice from the membrane
and reserve to juice.

Put the asparagus, lettuce,
tomatoes and orange segments into a bowl.

Mix together the vinegar and oil,
add 1 tsp of reserved orange juice and 1 tsp of the rind, season
with pepper and salt. Before serving, pour the dressing over the
salad and mix well. Serves 4.
