Spinach Asparagus and Orange Salad Recipe

Complicated salad dressing are rarely found in Spain - they simply rely on the wonderful flavor of a good quality olive oil.

 

Ingredients

  • romaine lettuce leaves - 75g, shredded

  • oranges - 2, large

  • asparagus - 250g, trimmed and cut into pieces

  • tomatoes - 2, cut into eighths

  • sherry vinegar - 1 tsp

  • olive oil - 3 tbsp

  • ground black pepper and salt

Method

  • Cook the asparagus on boiling salted water for 5 minutes until tender. Drain.

  • Grate the rind from half an orange and cut into segments. Squeeze out the juice from the membrane and reserve to juice.

  • Put the asparagus, lettuce, tomatoes and orange segments into a bowl.

  • Mix together the vinegar and oil, add 1 tsp of reserved orange juice and 1 tsp of the rind, season with pepper and salt. Before serving, pour the dressing over the salad and mix well. Serves 4.
