Sweet and Sour Artichoke Salad Recipe

Agrodolce is a sweet and sour sauce which works perfectly in this salad.

 

Ingredients

  • fresh or frozen peas - 180g

  • small globe artichoke - 7

  • fresh or frozen broad beans - 180g

  • onions - 2, chopped

  • juice of 1 lemon

  • olive oil - 3 tbsp

  • ground black pepper and salt

  • fresh mint leaves - to garnish

For the salsa agrodalce

  • caster sugar - 1 tbsp

  • white wine vinegar - 120ml

  • fresh mint leaves

Method

  • Peel the outer leaves from the artichokes and cut into quarters, put in a bowl of water with lemon juice.

  • Then, heat oil in a pan, cook the onions until golden, add the beans and stir gently.

  • Drain the artichoke and add into the pan, pour 300ml of water, then cover and simmer for 15 minutes.

  • Add the peas, season with pepper and salt, cook for 5 minutes more, stirring occasionally until the vegetables are tender.

  • Strain the vegetables through a sieve and put into bowl. Set aside to cool, then cover and chill in the fridge.

  • To make the salsa, mix together all ingredients in a pan, heat them until the sugar has dissolved. Simmer for 8 minutes, set aside to cool. drizzle over the salad, and garnish with mint leaves. Serves 4.
