Sweet and Sour Onions Recipe

Ingredients

  • baby onions - 500g, peeled

  • fresh parsley - 2 sprigs

  • wine vinegar - 50ml

  • bay leaf - 1

  • olive oil - 4 tbsp

  • raisins - 70g

  • tomato puree - 4 tbsp

  • caster sugar - 3 tbsp

  • ground black pepper and salt

Method

  • Place all ingredients in a pan with 350ml of water. Bring to boil and simmer gently, uncovered, for 50 minutes until the onions are tender and most liquid has evaporated.

  • Remove the parsley and bay leaf, season to taste with pepper and salt, serve on a dish. Serves 6.
