Sweet and Sour Peppers with Pasta Bows Recipe

A zesty dressing makes this simple pasta salad really special.

 

Ingredients

  • pasta bows - 250g

  • red, orange, and yellow pepper - 1 for each

  • fresh coriander - 3 tbsp, chopped

  • garlic - 2 cloves, crushed

  • capers - 3 tbsp

  • raisins - 3 tbbsp

  • wholegrain mustard - 2 tsp

  • runny honey - 2 tsp

  • lime juice - 1, plus grated rind

  • Parmesan cheese - to serve

  • ground black pepper and salt

Method

  • Quarter the peppers and remove the seeds, cook in boiling water for 15 minutes until tender. Drain. Peel away the skins, then cut the flesh lengthways into strips.

  • Mix the capers, garlic, coriander, honey, mustard, raisins, lime rind and juice into a bowl, season with pepper and salt and whisk together.

  • Cook the pasta in a pan of boiling salted water for 15 minutes until tender. Drain.

  • Return the pasta to the pan, add the peppers and dressing. Heat gently and toss well. Transfer onto a serving bowl, serve with shavings of Parmesan cheese. Serves 6.
