A zesty dressing makes this simple pasta
salad really special.
Ingredients

pasta bows - 250g

red, orange, and yellow pepper - 1 for
each

fresh coriander - 3 tbsp, chopped

garlic - 2 cloves, crushed

capers - 3 tbsp

raisins - 3 tbbsp
-
wholegrain mustard - 2 tsp
-
runny honey - 2 tsp
-
lime juice - 1, plus grated rind

Parmesan cheese - to serve

ground black pepper and salt
Method

Quarter the peppers and remove the
seeds, cook in boiling water for 15 minutes until tender. Drain.
Peel away the skins, then cut the flesh lengthways into strips.

Mix the capers, garlic, coriander,
honey, mustard, raisins, lime rind and juice into a bowl, season
with pepper and salt and whisk together.

Cook the pasta in a pan of boiling
salted water for 15 minutes until tender. Drain.

Return the pasta to the pan, add
the peppers and dressing. Heat gently and toss well. Transfer
onto a serving bowl, serve with shavings of Parmesan cheese.
