Vegetable and Noodle Soup Recipe

Ingredients

 

small onion - 1, chopped

broccoli - 180g, cut into small florets

tomato - 1, chopped

can tomatoes - 400g, crushed

can corn kernels - 140g, rinse and drained

zucchini - 1, halved and sliced

potato - 1, large, cut into cubes

carrot - 1, cut into cubes

dried Italian herbs - 1 tsp

chicken stock - 2 1/2 cups

bacon - 2, fat removed

tomato paste - 1 tbsp

small spiral pasta - 3/4 cup

margarine - 2 tsp

parmesan cheese - 4 tsp, grated

 

Method

 

Melt margarine in a heavy-based pan.

Add in onion, bacon, herbs and carrot, stir over medium heat until soft. Drain on paper towel.

Add tomatoes, potato, and stock, bring to boil, reduce heat and simmer for 10 minutes.

Add in the remaining ingredients, simmer over medium heat for 10-15 minutes. Stir occasionally.

The soup is ready when vegetables are soft. Serve hot with cheese.
