Bulgur Wheat and Broad Bean Salad Recipe

This appetizing salad is ideal served with fresh crusty whole meal bread and home-made chutney or pickle.

 

Ingredients

  • bulgur wheat - 400g

  • frozen broad beans - 250g

  • cherry tomatoes - 250g, halved

  • red pepper - 1, seeded and chopped

  • watercress - 75g

  • Spanish onion - 1, chopped

  • frozen petit pois - 120g

  • mangetouts - 75g, chopped

  • fresh thyme - 2 tbsp, chopped

  • fresh parsley - 2 tbsp, chopped

  • fresh basil - 2 tbsp, chopped

  • ground black pepper and salt

  • French dressing

Method

  • Soak and cook the bulgur wheat according to the package instructions. Drain, put into bowl.

  • Cook the broad beans and petit pois in boiling water for 5 minutes, drain and add to the prepared bulgur wheat.

  • Add the mangetouts, watercress, onion, pepper and cherry tomatoes to the bulgur wheat mixture. Toss well until the ingredients are well-combined.

  • Add the chopped fresh thyme, basil, parsley, and French dressing to taste, season with pepper and salt, toss the ingredients together. Serve immediately. Serves 6.
