This appetizing salad is ideal served
with fresh crusty whole meal bread and home-made chutney or pickle.
Ingredients

bulgur wheat - 400g

frozen broad beans - 250g

cherry tomatoes - 250g, halved

red pepper - 1, seeded and chopped

watercress - 75g
-
Spanish onion - 1, chopped

frozen petit pois - 120g
-
mangetouts - 75g, chopped

fresh thyme - 2 tbsp, chopped
-
fresh parsley - 2 tbsp, chopped

fresh basil - 2 tbsp, chopped

ground black pepper and salt

French dressing
Method

Soak and cook the bulgur wheat
according to the package instructions. Drain, put into bowl.

Cook the broad beans and petit
pois in boiling water for 5 minutes, drain and add to the
prepared bulgur wheat.

Add the mangetouts, watercress,
onion, pepper and cherry tomatoes to the bulgur wheat mixture.
Toss well until the ingredients are well-combined.

Add the chopped fresh thyme,
basil, parsley, and French dressing to taste, season with pepper
and salt, toss the ingredients together. Serve immediately.
