Carrot Muffins with Zucchini Recipe

Ingredients

 

plain flour - 1/2 cup

low fat milk - 1/3 cup

whole meal plain flour - 1/2 cup

sugar - 2 tbsp

egg - 2, egg white only

margarine - 60g, melted

poppy seeds - 1 tbsp

carrot - 1/4 cup, grated

baking powder - 2 tsp

zucchini - 1/4 cup, grated

 

Method

 

Preheat oven to 210˚C.

Brush oil or margarine in bottom of muffin tins.

Mix the baking powder and all the flours together in a bowl.

Add sugar, poppy seeds, zucchini, and carrots and mix well.

Mix well egg white, milk, and margarine. Then add into the flours, stir until the ingredients are well combined.

Spoon the mixture into the muffin tin (only fill 2/3 full) and bake 20 minutes. Cool. Makes 12.
