Choc-orange Muffins Recipe

Ingredients

 

plain flour - 1/2 cup

whole meal flour - 1/2 cup

caster sugar - 2 tbsp

bicarbonate soda - 1/2 tsp

margarine - 50g

orange juice - 1/4 cup

grated orange rind - 1 tsp

vanilla essence - 1/2 tsp

cocoa powder - 1 tbsp

egg - 1

water - 1/4 cup, boiling

 

Icing

 

icing sugar - 1/3 cup

strawberries - 6, halved or 12 mandarin segments

cocoa - 1 tsp

 

Method

 

Preheat oven to 180˚C.

Mix together cocoa, water and soda, set aside.

Mix egg, margarine, and sugar and beat it lightly, then add in vanilla and orange rind.

Mix flour together, fold into the creamed mixture alternately with cocoa mixture and orange juice.

Spoon into paper cake cases and bake for 12-15 minutes. Cool.

Combine icing sugar and cocoa in a bowl, add orange juice to make a firm paste.

Place the bowl in a pan of simmering water, stir until icing smooth and glossy, then remove from heat.

Spread the icing over the cake, place halved strawberry or mandarin segment on top of each cake. Make 12.
