Ingredients

courgettes - 500g, cut into strips

sun-dried tomatoes - 5, dry or
preserved on oil and drained

large onion - 1, sliced

garlic - 1 clove, chopped

warm water - 150ml

olive oil - 3 tbsp

ground black pepper and salt
Method

Slice the sun-dried tomatoes into
strips, place in a bowl with warm water for 20 minutes.

Heat oil in a pan, stir in the
onion. Cook over moderate heat until the onion softens but not
brown.

Stir the cougettes and garlic,
cook for few minutes, continuing to stir the mixture.

Add in the tomatoes and their
soaking liquid, season with pepper and salt. Raise the heat
slightly, cook until the courgettes are just tender, season with
pepper and salt, and serve hot or cold. Serves 2-3.
