Crispy Chicken with Lemon Sauce Recipe

Ingredients

 

chicken breast fillets - 2, skin removed

garlic - 1/2 tsp, crushed

cornflakes crumbs - 1/2 cup

egg - 1, lightly beaten

ground mustard powder - 1/4 tsp

black pepper - 1/4 tsp

 

Sauce

 

orange juice - 1/4 cup

cornflour - 2 tsp

water - 2 tbsp

lemon juice - 2 tbsp

sugar - 1 tsp

 

Method

 

Preheat oven to 180˚C. Line oven tray with foil.

Remove tenderloins from fillets. Set the tenderloins aside.

Cut each fillets into strips.

Mix mustard, egg, garlic, and pepper in a bowl, whisk until smooth.

Dip the fillet strips and tenderloins in egg mixture a few pieces at a time. Coat with crumbs.

Arrange the chicken on the tray, bake 10-15 minutes until golden and crisp.

To make the sauce, blend sugar and cornflour in water until smooth.

In a small heavy-based pan, stir in the sugar mixture and juices over medium heat until mixture boil and thickens. Cool.

Serve the chicken with sauce. Serves 4-6.
