Egg and Fruits Coleslaw Recipe

Ingredients

 

egg - 1, hard-boiled, quartered

cooked lean chicken - 2 slices

canned apricot - 4, halves, drained, and chopped

canned pineapple pieces - 1/2 cup, drained

nutmeg - pinch

low-fat yogurt - 2 tbsp

honey - 2 tsp

cabbage - 1 cup, shredded

wholemeal pitta - 1

 

Method

 

Mix apricot halves, cabbage, and pineapple pieces in a bowl.

Mix together honey, yogurt and nutmeg in another bowl.

Pour the mixed yogurt over the cabbage and toss well.

Arrange the coleslaw to a bowl or lunchbox, garnish with egg and chicken.

Serve the coleslaw and bread together.
