Herby Rice Pilaf Recipe

Ingredients

  • mixed brown basmati and wild rice - 250g

  • fresh mixed herbs - 4 tbsp, chopped

  • onion - 1, chopped

  • garlic - 1 clove, crushed

  • vegetable stock - 800ml

  • ground turmeric - 2 tsp

  • ground cumin - 2 tsp

  • ground black pepper and salt

  • olive oil - 2 tbsp

  • sultanas - 65g

  • sprigs of fresh herbs - to garnish

  • pistachio nuts - 30g, chopped, to garnish

Method

  • Wash the rice under cold water, drain well.

  • Heat the oil, add in garlic and onion, cook for 5 minutes, stirring occasionally.

  • Then, add the rice and spices, cook for few minutes, stirring. Stir in the stock and sultanas, bring to boil, cover and simmer for 25-30 minutes, stirring occasionally.

  • Add the mixed herbs and season with pepper and salt, stir well.

  • Serve the pilaf on a warmed serving dish and garnish with sprigs of fresh herbs and pistachio nuts. Serves 4.
