Ingredients

mixed brown basmati and wild rice -
250g

fresh mixed herbs - 4 tbsp, chopped

onion - 1, chopped

garlic - 1 clove, crushed

vegetable stock - 800ml

ground turmeric - 2 tsp
-
ground cumin - 2 tsp
-
ground black pepper and salt
-
olive oil - 2 tbsp
-
sultanas - 65g
-
sprigs of fresh herbs - to garnish

pistachio nuts - 30g, chopped, to
garnish
Method

Wash the rice under cold water,
drain well.

Heat the oil, add in garlic and
onion, cook for 5 minutes, stirring occasionally.

Then, add the rice and spices,
cook for few minutes, stirring. Stir in the stock and sultanas,
bring to boil, cover and simmer for 25-30 minutes, stirring
occasionally.

Add the mixed herbs and season
with pepper and salt, stir well.

Serve the pilaf on a warmed
serving dish and garnish with sprigs of fresh herbs and
pistachio nuts. Serves 4.
