Home-Made Soba Recipe (Japanese Noodle)

Ingredients

 

soba noodles - 8 ounces

spring onion - 1, small, sliced

dashi (Japanese broth) - 4-5 cups

water

fresh salmon - 12 slices, sliced

nori - 1 sheet, cit into strips

black sesame seeds - 1-2 tbsp

sesame oil - a dash

wasabi - 1-2 tbsp

 

Making dashi

 

You can buy instant dashi or boil 5 cups of water and 1 strip of kombu seaweed for an hour.

 

Method

 

Cook the soba in a boiling water, rinse immediately in cold water and place in a bowl.

Heat dashi over medium-high heat, add in salmon, cook for 1 minutes and add spring onion and sesame oil.

Pour the dashi into the soba, sprinkle with nori strips, black sesame seed and wasabi on the side. Serve 4.
