Potatoes Melt Recipe

Ingredients

 

potatoes - 2, small

cauliflower - 3/4 cup, cut into florets

broccoli - 3/4 cup, cut into florets

onion - 1/4 medium size

garlic - 1 clove, crushed

soy cheese - few strips

sour cream - 3 tbsp

marinara sauce - 1 cup

margarine - 1 tbsp

elbow pasta - 1/2 cup, cooked

herbs: parsley, oregano, basil, fennel - to taste

 

Method

 

Wash and quarter potatoes. Boil in water for 20 minutes.

Mince garlic and onion in blender, steam broccoli and cauliflower for 4 minutes, and cook pasta.

Heat herbs and marinara sauce.

When the potatoes are cooked, drain and pulverize them with onions in blender.

Add in margarine and sour sauce.

When blended, spread mash at the bottom of a small casserole dish.

Layer on with pasta, cheese, vegetables, and sauce, then bake for 10 minutes at 400˚F. Serves 2.
