Ingredients

basmati rice - 165g

small red onions - 2, chopped

cherry tomatoes - 250g, halved

red pepper - 1, seeded and chopped

eggs - 2, beaten

peanut oil - 3 tbsp

ground black pepper and salt
Method

Bring a large pan of water to
boil, add the rice and cook for 12-15 minutes.

Heat the oil in another pan,
stir-fry the red pepper and onions for few minutes, add the
cherry tomatoes and continue stir-frying for 3 minutes more.

Pour the beaten egg into the pan,
cook for a while without stirring, then stir to break up the
egg.

Add the cooked rice into the pan
and toss it over the heat with the vegetables and egg mixture
for few minutes.

Season with pepper and salt, serve
on a dish. Serves 4.
