Red Fried Rice Recipe

Ingredients

  • basmati rice - 165g

  • small red onions - 2, chopped

  • cherry tomatoes - 250g, halved

  • red pepper - 1, seeded and chopped

  • eggs - 2, beaten

  • peanut oil - 3 tbsp

  • ground black pepper and salt

Method

  • Bring a large pan of water to boil, add the rice and cook for 12-15 minutes.

  • Heat the oil in another pan, stir-fry the red pepper and onions for few minutes, add the cherry tomatoes and continue stir-frying for 3 minutes more.

  • Pour the beaten egg into the pan, cook for a while without stirring, then stir to break up the egg.

  • Add the cooked rice into the pan and toss it over the heat with the vegetables and egg mixture for few minutes.

  • Season with pepper and salt, serve on a dish. Serves 4.
