Rice with Seeds and Spices Recipe

Ingredients

  • garlic - 1 clove, crushed

  • basmati rice - 250g

  • vegetable stock - 450ml

  • toasted sesame seeds - 2 tbsp

  • toasted sunflower seeds - 2 tbsp

  • coriander seeds - 2 tsp, crushed

  • ground turmeric - 1 tsp

  • cardamom pods - 7, crushed

  • natural yogurt - 120g

  • ground black pepper and salt

  • sunflower oil - 2 tsp

  • coriander leaves - to garnish

Method

  • Heat the oil in a pan, fry the garlic and spices for few seconds, stirring all the time.

  • Add the rice and stock, bring to boil, cover and simmer for 20 minutes until the rice is just tender.

  • Stir in the toasted sunflower and sesame seeds, yogurt, and season with pepper and salt. Garnish with coriander leaves, serve hot. Serves 6.
