Rice Soup Recipe

Ingredients

 

cooked rice - 1/4 cup

carrots - 2 tbsp, diced

celery - 2 tbsp, diced

oil - 1 tsp

chicken stock - 1 1/4 cup

leftover lean chicken - 1/3 cup, cooked, diced

small onion - 1, sliced

pappadums - 2, large, cooked

mild curry powder - 1/2 tsp

yogurt - 1/4 cup

 

Method

 

Heat oil, add in onion and stir until it softened. Add curry powder and mix well.

Add chicken, carrot, celery and chicken stock and bring to boil.

Reduce heat and simmer for 10 minutes, stir in rice and yogurt. Stir and simmer for a while.

Serve the soup together with the pappadums. Serve 1.
