Salmon Salad Lunchbox Recipe

Ingredients

 

can salmon flakes - 1/2 cup

wholegrain crackers - 16, small

mixed vegetables - cut into sticks (any veggie of your choice)

fresh parsley - 1 tsp, minced

red onion - 1 tsp, minced

mixed grapes - 1 cup

watercress - 1/2 cup, tough stems removed

kalamata olives - 2, pitted and diced

capers - 1 tsp, rinsed and chopped

lemon juice - 1 tbsp

olive oil - 1 tbsp

 

Method

 

Mix well salmon, olives, parsley, capers, red onion, oil, and lemon juice in a bowl.

Pack the salmon salad, crackers and watercress in one container.

Arrange the grapes and vegetables in another container. Serve 1.
