Ingredients

packet marinated tofu - 175g, cut into
small dice

large open-cap mushrooms - 4

garlic - 1 clove, crushed

can sweetcorn - 100g, drained

spring onions - 2, sliced

mushroom sauce - 2 tbsp

sesame oil - 1 tsp

ground black pepper and salt
Method

Preheat the oven to 200˚C. Chop
the mushroom stalks and mix with the garlic, spring onion, and
mushroom sauce.

Stir in the sweetcorn and tofu,
season with pepper and salt, spoon them into the mushrooms.

Brush the mushroom edge with the
sesame oil. Then bake the stuffed mushrooms for 15 minutes until
the mushroom are just tender. Serve hot. Serves 2-3.
