Tofu with Mushrooms Recipe

Ingredients

  • packet marinated tofu - 175g, cut into small dice

  • large open-cap mushrooms - 4

  • garlic - 1 clove, crushed

  • can sweetcorn - 100g, drained

  • spring onions - 2, sliced

  • mushroom sauce - 2 tbsp

  • sesame oil - 1 tsp

  • ground black pepper and salt

Method

  • Preheat the oven to 200˚C. Chop the mushroom stalks and mix with the garlic, spring onion, and mushroom sauce.

  • Stir in the sweetcorn and tofu, season with pepper and salt, spoon them into the mushrooms.

  • Brush the mushroom edge with the sesame oil. Then bake the stuffed mushrooms for 15 minutes until the mushroom are just tender. Serve hot. Serves 2-3.
