Ingredients

cans tomatoes - 2 x 400g, chopped

lady's fingers - 250g

jar pimientos - 300g, drained

onion - 1, chopped

fresh parsley - 2 tbsp, chopped

olive oil - 1 tbsp

ground black pepper and salt
Method

Heat the oil in pan, add in the
onion and cook for few minutes.

Chop the pimientos and add to the
onion, add the tomatoes and mix well.

Cut off the top of the lady's
fingers and cut into halves. Add to the tomato sauce in the pan.
Season with a lot of pepper and salt.

Bring the vegetables stew to boil,
then lower the heat, cover the pan and simmer for 15 minutes
until vegetables are tender and the sauce has thickened.
Finally, stir in the parsley and serve hot. Serves 4.
