Turkey Crepes with Avocado

Ingredients

 

lettuce - 1 cup, shredded

lean turkey - 6 slices, cooked

small avocado - 1, sliced

cottage cheese - 1/2 cup

redcurrant jelly - 6 tsp

 

Batter

 

low-fat milk - 1 cup

wholemeal flour - 1/2 cup

plain flour - 1/4 cup

egg - 1, lightly beaten

 

Method

 

Mix all flours into a bowl, make well in center, add milk and egg.

Stir until all liquid is incorporated and batter is free of lumps. Cover with plastic wrap and leave for 5 minutes.

Heat a pan, greased with little oil, pour 3 tbsp batter into it.

Swirl evenly, cook over medium heat on both sides until underside is golden. Repeat the same step on the remaining batter.

Place the slice of turkey on half the crepe, top with avocado, 1 tsp jelly, lettuce and cheese.

Fold other half of crepe over. Serve cold or hot.
