Penne with Vegetable Sauce Recipe

A low fat pasta dish toss with fresh vegetables which is ideal for a light meal.

 

Ingredients

  • 350 gram dried penne

  • 1 small leek (thinly sliced)

  • 2 carrots (finely diced)

  • 1 zucchini (finely diced)

  • 75 grams French beans

  • small bunch of fresh parsley (chopped)

  • 2 ripe tomato (peeled and diced)

  • 15 ml olive oil

  • 1 tsp sugar

  • salt and pepper to taste

Method

  • Heat oil in a sauce pan, stir-fry carrots and leek with sugar for about 5 minutes until vegetables and cooked.

  • Stir in the zucchini, French beans, seasoning  and stir to mix well then let it cook for about 5 minutes or until vegetables are tender.

  • Cook pasta in a deep sauce pan with salted boiling water until pasta reach the right softness. Drain and set aside.

  • Toss pasta with cooked vegetables, fresh chopped tomato and parsley, serve warm.
