Banana Muffins with Nut Recipe

 

Ingredients

 

milk - 1/3 cup

whole meal plain flour - 1/2 cup

margarine - 60g

white plain flour - 1/2 cup

sugar - 1/4 cup

baking powder - 2 tsp

banana - 1/2 cup, mashed

peanut butter - 1 tbsp

egg white - 1, lightly beaten

 

Method

 

Preheat the oven to 210˚C.

Brush bottoms of the muffin cups with margarine or oil.

Mix well the flours, baking powder, and sugar in a bowl.

Combine egg, milk, margarine, peanut, and banana together, then add into the flours mixing.

Stir the mixing until it combined well.

Spoon the mixture into the muffin tin (fill only 2/3).

Bake for 20 minutes until golden. Cool the muffins on wire racks then store in airtight container. Makes  6.

 

Preparation time: 15 minutes

Total cooking time: 20 minutes
