Banana Walnut Cupcakes Recipe

 

Ingredients

 

ripe banana - 300g, mashed coarsely

walnut - 50g, chopped

butter - 120g

water - 50ml mixed with 1 tbsp white vinegar

icing sugar - 120g

cinnamon powder - 1/2 tsp

self-raising flour - 250g

baking powder - 1 tsp

bicarbonate of soda - 1/2 tsp

salt - 1/2 tsp

 

Method

 

Preheat oven at 190˚C for 15 minutes, line a 20-hole patty tin with cupcakes paper.

Beat butter and icing butter with electric mixer until light and fluffy.

Add vinegar mixture and stir well.

Fold in flour, bicarbonate of soda, baking powder, cinnamon powder, salt, mashed banana and chopped walnuts.

Spoon the mixture into patty tins and bake for 15 minutes.

Remove and cool on a wire rack. Makes 20.
