This is a refreshing dip that is
especially good to serve with fresh vegetable crudités and
breadsticks.
Ingredients

butter bean - 450g, rinsed and drained

watercress - 50g, chopped

mixed herbs - 3 tbsp, chopped

spring onions - 1 bunch, chopped

plain cottage cheese - 250g
-
mayonnaise - 5 tbsp

ground black pepper and salt

vegetable crudités and breadsticks -
to serve

watercress sprigs - to garnish
Method

First, put the cheese, butter
bean, mayonnaise, herbs, spring onions and watercress in a
blender and blend until fairly smooth.

Season the mixture with pepper and
salt, spoon the mixture into a dish.

Cover the mixture and chill for
several hours before serving.

Finally, transfer to a serving
dish and garnish with watercress sprigs. Serve with vegetable
crudités and breadsticks. Serves 5.
