Cheese-stuffed Pears Recipe

These pears, with their scrumptious creamy topping, make a sublime dish when served with a simple salad.

 

Ingredients

  • ripe pears - 4

  • dates - 4, stoned and cut into thin strips

  • ricotta cheese - 75g

  • dolcelatte cheese - 75g

  • honey - 2 tbsp

  • celery sticks - ½, sliced

  • green olives - 8, pitted and chopped

  • paprika - a pinch

  • apple juice - 150ml

Method

  • Preheat the oven to 200˚C. Place the ricotta in a bowl and crumble in the dolcelatte.

  • Then, add all the ingredients except the pears and the apple juice and mix well.

  • Halve the pears lengthways and use a melon baller to remove the cores.

  • Place the pears in an ovenproof dish and divide the filling equally between them.

  • Pour in the apple juice and cover the dish with a foil.

  • Then, bake for 25 minutes until the pears are tender.

  • Remove the foil and place the dish under a hot grill for 5 minutes. Serve hot. Serves 2.
