These pears, with their scrumptious
creamy topping, make a sublime dish when served with a simple salad.
Ingredients

ripe pears - 4

dates - 4, stoned and cut into thin
strips

ricotta cheese - 75g

dolcelatte cheese - 75g

honey - 2 tbsp

celery sticks - ½, sliced

green olives - 8, pitted and chopped

paprika - a pinch

apple juice - 150ml
Method

Preheat the oven to 200˚C. Place
the ricotta in a bowl and crumble in the dolcelatte.

Then, add all the ingredients
except the pears and the apple juice and mix well.

Halve the pears lengthways and use
a melon baller to remove the cores.

Place the pears in an ovenproof
dish and divide the filling equally between them.

Pour in the apple juice and cover
the dish with a foil.

Then, bake for 25 minutes until
the pears are tender.

Remove the foil and place the dish
under a hot grill for 5 minutes. Serve hot. Serves 2.
