Delicious little fried morsels of potato
and feta cheese. flavored with dill and lemon juice.
Ingredients

potatoes - 500g

feta cheese - 120g
-
fresh dill - 3 tbsp, chopped

egg - 1 beaten
-
spring onions - 4, chopped
-
olive oil - 3 tbsp

lemon juice - 1 tbsp

ground black pepper and salt

flour
Method

Boil the potatoes in their skins
in lightly salted water until it soft. Drain, then peel and mash
while still warm.

Crumble the cheese into the
potatoes and add the spring onions, lemon juice, egg, and dill.

Season with pepper and salt, stir
well.

Cover the mixture and chill until
firm. Divide the mixture into walnut-size balls, then flatten
them slightly. Dredge with the flour.

Heat the oil in a pan and fry the
patties until golden brown on each side. Drain.

Serve warm. Serves 4.
