Greek Cheese and Potato Patties Recipe

Delicious little fried morsels of potato and feta cheese. flavored with dill and lemon juice.

 

Ingredients

  • potatoes - 500g

  • feta cheese - 120g

  • fresh dill - 3 tbsp, chopped

  • egg - 1 beaten

  • spring onions - 4, chopped

  • olive oil - 3 tbsp

  • lemon juice - 1 tbsp

  • ground black pepper and salt

  • flour

Method

  • Boil the potatoes in their skins in lightly salted water until it soft. Drain, then peel and mash while still warm.

  • Crumble the cheese into the potatoes and add the spring onions, lemon juice, egg, and dill.

  • Season with pepper and salt, stir well.

  • Cover the mixture and chill until firm. Divide the mixture into walnut-size balls, then flatten them slightly. Dredge with the flour.

  • Heat the oil in a pan and fry the patties until golden brown on each side. Drain.

  • Serve warm. Serves 4.
