Oats Cookies Recipe

 

Ingredients

 

rolled oats - 1/2 cup

egg white - 1

buttermilk - 1/4 cup

margarine - 60g

carrot - 1/3 cup, grated

whole meal self-raising flour - 1/2 cup

caster sugar - 1/4 cup

mixed spice - 1/2 tsp

currants - 1/3 cup

 

Method

 

Preheat oven to 180˚C. Grease the biscuit trays with oil or margarine.

Mix the margarine and sugar and beat until light, then add egg white and mix until creamy.

Add in flours, carrot, currants, spice and stir.

Add in buttermilk and oats and mix well.

Scoop 1 tbsp of mixture and coat in rolled oats (extra 2/3 rolled oats), then transfer to the trays.

Press the mixture top down with fork and bake 12-15 minutes. Cool. Makes 15.
